Spaghetti Meat Sauce


One of my favorite recipes growing up was my mom’s spaghetti. Her spaghetti sauce was to die for. Most people I know are too busy to make homemade sauce and instead buy a jar of pre-made sauce from the store. Homemade sauce is actually so easy and it delicious! Once you make this, you will not want to buy pre-made sauce again.

Spaghetti sauce is another recipe that I like to “hide” as many vegetables as I can in it. Carrots are a natural sweetener and taste great in spaghetti sauce.

Are you gluten free? Don’t worry…you can still eat spaghetti sauce. Instead of pasta, I love to serve the sauce over grated zucchini. Trust me…it’s delicious!

2 pounds ground beef
1 sweet onion, diced
4 cans organic diced tomatoes
2-3 carrots, grated
1 green pepper, chopped
3  garlic cloves, minced
1 bay leaf
1 1/2 tsp oregano
1 tsp salt
1 tsp pepper

1. Brown ground beef and onion. Drain.

2. Add the next 7 ingredients.

3. Bring to a boil. Reduce heat and simmer for 1 hour.

4. Remove bay leaf.

5. Serve over zucchini.


Zucchini “noodles”

3 zucchinis
1 tsp coconut oil

Grate zucchini. (I use a food processor.) Heat coconut oil in pan. Saute zucchini for about 2-4 minutes or until soft and warm. Sprinkle with salt.
