Roasted Tomatoes with Goat Cheese

I’ve been reading the cookbook Healing Foods  by Sandra Ramacher. I couldn’t wait to make one of her delicious recipes. I decided on the Roasted Tomatoes with Goat Cheese.

I was amazed that such a simple recipe could taste so wonderful!

Roasted Tomatoes with Goat Cheese

Ingredients:

6 plum tomatoes, halved
1 TBSP olive oil
sea salt and pepper
1/4 cup raw goat cheese
1 tsp honey (optional)
1 TBSP fresh basil, minced
1 TBSP fresh basil, shredded

Preheat oven to 350 degrees. Place the halved tomatoes on cookie sheet with inside facing up. Brush with olive oil and sprinkle with salt and pepper. Bake in oven for 2 hours or until they start to resemble sun-dried tomatoes. Remove  from oven and let cool completely. Mix together goat cheese, honey, and minced basil. Distribute the cheese between the tomato halves and top with the shredded basil.
