Paleo Almond Cookies

Sometimes you  just need a quick recipe to satisfy a sweet tooth…without the sugar!  These cookies will do the trick and they only takes a few minutes to whip up!

Ingredients:

  • 1-1/4 cups blanched almond flour (it has to be the blanched flour.)
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 TBSP coconut oil, melted
  • 4 TBSP maple syrup
  • 1 tsp pure vanilla extract
  • 1/4 cup toasted slivered almonds (optional)

Preheat oven to 325 degrees.

Mix flour, soda and salt in a bowl. In a separate bowl, mix coconut oil, syrup and vanilla. Add wet ingredients to dry ingredients. Add almonds.  Mix well.

Scoop a teaspoon of dough onto cookie sheet. Flatten lightly. They will not spread on their own.

Bake in oven for 8 minutes.

**To make the Chocolate Cookies: add 1/4 cup unsweetened cocoa powder to your dry ingredients; omit almonds. Everything else remains the same.
