This recipe came from a good friend of mine. When I first tasted these lemon bars, I knew I NEEDED this recipe.
They were a huge hit when I served them for our Easter dessert.
Healthy Lemon Bars
- 2 cups coconut cream concentrate
- 1/2 cup melted butter
- 1/2 cup coconut oil
- 1/2 to 1 cup raw honey (to taste)
- Zest of 3 lemons
- Juice of 3 lemons
- 1/2 tsp. vanilla
- Dried, shredded coconut
Mix all ingredients together except the dried coconut shreds.
Sprinkle coconut shreds on bottom of your pan. Pour or spread lemon mixture on top of coconut and press down.
Sprinkle more coconut shreds on top and chill. Cut into bars.
