Forget about the chocolates and candy for Valentine’s Day. Here is a recipe for Gluten-free Coconut Cupcakes that is sure to please your sweetheart!
Gluten-free Coconut Cupcakes
- 1/2 cup coconut flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 6 eggs
- 1/2 cup coconut oil
- 1/2 cup honey
- 1 TBSP vanilla
- 1/2 cup unsweetened coconut flakes
Preheat oven to 350 degrees. Line muffin pans with cupcake papers. Mix dry ingredients (except coconut flakes.) and wet ingredients in separate bowls. Combine all ingredients and mix with hand mixer. Pour batter into cupcake tins until about 2/3 filled.
Bake for 20 minutes. Makes 8-10 cupcakes. Cool completely and frost, if desired.
- 1 stick salted butter (softened)
- 1 lb. powdered sugar
- 1/4 cup almond milk
- 1 teaspoon vanilla
Beat with electric mixer for 2 minutes. Sprinkle with coconut flakes.
You may have frosting left over. Freeze for your next batch. (I cut the recipe in half and still had plenty of frosting.)
