Creamy Gazpacho Soup

Gazpacho is traditionally a tomato-based vegetable soup, usually served cold, which makes it  a wonderful summer meal.  It is quick and easy to make and very nutritious since it’s made with all raw vegetables.

Creamy Gazpacho Soup

Ingredients:

4 medium tomatoes
1/2 cucumber
1/3 red bell pepper
a few baby carrots
1/8 cabbage
1-2 tsp olive oil
1/4 avacado (optional)

Blend together (I use my food processor):

4 medium tomatoes

1/2 cucumber

This will make a juicy base. Then add the following:

  • 1/3 red bell pepper
  • a few baby carrots
  • 1/8 cabbage
  • 1-2 tsp olive oil
  • 1/4 avocado

Add per taste or substitute as you wish: onion, garlic, celery, spinach, broccoli, etc. Some people even like to add green apple. You can also add flax seeds. Anythings goes!

Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop. Top with diced tomatoes, cilantro and avocado, if desired.
