During January, I’ve committed to eating entirely whole foods. Okay, I can do that. But I’ve also committed to no sugar. Okay, I can do that, too. Unfortunately, that means no honey, maple syrup, stevia, etc. Now, it’s getting serious!!! I didn’t realize how many desserts I would bake to satisfy my sweet tooth….even if the desserts were healthy.
A few nights ago, I wanted something that wasn’t a vegetable. Something warm and sweet. I made Coconut Fried Bananas. My husband actually told me several times how much he loved them. He even stopped by the store on his way home from work, just to pick up more bananas so I could make them again.
This is the easiest recipe ever…..but it is such a nice treat, I had to share.
- 2 bananas (ripe, but firm)
- 1/2 cup unsweetened organic coconut
- 1/2 tsp cinnamon
- coconut oil
Mix the coconut and cinnamon in a small bowl. Heat up the coconut oil in pan. Cut the bananas in 1/2 -1 inch slices. Dip each slice in the coconut mixture. (I dipped the bananas in water first, just to make sure the coconut would stick.) Fry bananas in oil until golden brown on both sides. It takes about 20 seconds.
That’s it! I’m telling you it is the easiest snack ever!!
