Now that the snow has melted it’s time to start thinking about spring and summer treats. One of the best things I purchase a few summers ago was a popsicle mold. It is so easy to make healthy popsicles and my kids LOVE them! If you don’t have molds, use Dixie cups instead.
When making your own popsicles, remember anything goes. I used canned coconut milk because it is so creamy and I love the taste. When making popsicles, be creative. You can add ripe bananas, coconut flakes, fruit…whatever you like!
- 1 can coconut milk (full fat)
- 2 TBSP 100% unsweetened cocoa
- 1/2 tsp vanilla
- chocolate chips (optional)
**sweetener is optional. You can add honey, maple syrup, or stevia
Add all ingredients in a blender and blend until smooth. Pour into popsicle molds. Leave enough space for the liquid to expand when it freezes and also space for chocolate chips. Add a few chocolate chips on the bottom of each popsicle before you add the sticks. Freeze for 4-6 hours, or overnight.
