Banana Bread (Grain-free, No Sugar)

I love making banana bread. It takes me back to my childhood, when my mom would bake banana bread, and the wonderful smell would fill our entire house. This bread is no exception! Plus it will give you an excuse to use those banana’s that are too ripe to eat, but perfect to make this bread sweet.

Ingredients

  • 2 ½ cups almond flour
  • 1 tsp baking soda
  • ½ TBSP cinnamon
  • 2 eggs
  • ¼ cup honey (can add up to 1/4 cup more depending on how sweet you like your bread)
  • ½ cup unsweetened almond milk
  • 1 tsp pure vanilla
  • 3 ripe bananas, mashed

Instructions

  1. Preheat oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper or the bottom of 4 mini loaf pans.
  2. Mix together the almond flour, baking soda, and cinnamon.
  3. In a separate bowl, beat two eggs well. Mix in the milk, honey, and vanilla.
  4. Mash the bananas with a fork.  Stir the mashed bananas into the egg mixture.
  5. Add dry ingredients to wet ingredients and mix well.
  6. Pour into loaf pan or mini loaf pans.
  7. Bake for 50-55 minutes for large pan, or 30 minutes for mini pans,  or until a toothpick inserted in the center comes out clean.
  8. Let cool in pan for 5 minutes, and then remove to cooling rack to cool completely.

 

This makes a perfect gift for a teacher or friend. If you want to give a few loaves as a gift, wrap in parchment paper, tie with cute ribbons, and add a tag!
